Cucumber Bites 4 Ways

Cucumber bites are great for a variety of reasons: they’re easy, they’re fast, they don’t require baking, there are plenty of low carb options, they can be savory or sweet, and they’re fun for kids. Here are a few of our favorites!

Chicken Salad Bites

Ingredients:

1  12.5 oz. can chicken

¼  cup fat free Greek yogurt (makes it high protein/low carb/virtually fat free)

¼  cup chopped celery

¼  cup chopped green onion

Seasoning to taste: cracked black pepper, onion salt, Everything but the Bagel

1 med-large cucumber, sliced

Directions:

Mix first four ingredients and seasonings in a small bowl. Put 1-2 tablespoons of chicken salad on top of each cucumber slice. Top with a sprinkle of Everything but the Bagel seasoning. Refrigerate until ready to serve.

 

Cream Cheese, Salmon & Dill Bites

Ingredients:

8  oz. whipped cream cheese (we used this brand)

1 10 oz. package sliced smoked salmon (we used this brand)

1 bunch fresh dill

1 med-large cucumber, sliced

Directions:

Place 1-2 tablespoons cream cheese on each slice of cucumber. Top with a piece of salmon and 1 small sprig of dill.

 

Mediterranean Bites

Ingredients:

8 oz. hummus (we used this brand)

10 Kalamata olives

Feta cheese crumbles

1 med-large cucumber, sliced

Directions:

Place 1-2 tablespoons hummus on each cucumber slice. Top with one olive sliced in half lengthwise and 2 small crumbles of feta

 

Dessert Bites

Ingredients:

½ cup Ricotta cheese

2 teaspoons honey

6 strawberries, sliced thinly

Balsamic glaze (we used this brand)

1 med-large cucumber, sliced

Directions:

Add honey to ricotta cheese and mix in a small bowl.  Top each cucumber slice with a 1 tablespoon of the ricotta mixture (less is more with this one because it can gush!). Add a few strawberry slices and drizzle with balsamic glaze.
