A simple but satisfying soup that can be made in about 15 minutes flat, perfect for being cooped up inside surviving the harsh winter weather.
Servings: Makes approximately 4-5 cups
Ingredients:
- 12 oz. raw broccoli florets
- ~17 oz. bone broth (or soup stock of choice)
- 1 large onion, chopped
- Salt and pepper to taste, and/or seasoning blend of choice (we used umami)
- ~2 tbsp olive oil (or cooking oil of choice)

Directions:
Steam the broccoli until tender, about 6-8 minutes. While broccoli is steaming, sauté onion 5-7 minutes, or until translucent.
Add steamed broccoli, sautéed onion, and entire container of bone broth to a blender and blend until smooth.
Add salt and pepper or other seasoning to taste, and enjoy!
