Yield: 16 pieces

Ingredients:

  • 3 cups sugar-free chocolate chips
  • 14 ounces heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla
  • 3/4 cup confectioners swerve or lakanto
  • 1.5 cups keto nuts chopped (optional) I love walnuts, almonds or pecans

Instructions:

  1. Prep. Line an 8×8″ casserole dish with parchment paper.
  2. Melt. Add sugar-free chocolate chips, heavy cream, and unsalted butter to a large microwave-safe bowl. Microwave for 1 1/2 minutes at 50% power. Stir ingredients to incorporate. Repeat using 30-second intervals until everything has melted together and your fudge has a smooth texture.
  3. Stir in confectioners erythritol, vanilla, and chopped nuts.
  4. Set. Pour fudge into your prepared baking dish and smooth the top using a rubber spatula. Place in the fridge and allow fudge to set for at least 3 hours. Cut into 16 pieces and enjoy!
