Ingredients:
- 20 oz canned chicken
- 2 oz parmesan cheese, grated
- 2 large eggs
- 1 teaspoon Italian seasoning
- 1 pinch salt
- Pizza sauce, your favorite toppings, and cheese
Directions:
- Begin by draining the chicken and laying it down on several paper towels. Press the moisture out of the chicken with additional towels to remove excess water.
- Transfer chicken to baking sheet lined with parchment paper and bake at 350°F for 10 minutes.
- Increase oven temperature to 500°F
- Combine chicken, cheese, eggs, Italian seasoning, and salt in a bowl and mix.
- Spread the chicken mixture onto another sheet of parchment paper and form a pizza-shaped crust. I find that using a rolling pin with another parchment sheet helps get the crust thin.
- Bake for 10 minutes at 500°F.
- Add pizza sauce, toppings and cheese, and cook for an additional 8-10 minutes.
- Remove from oven and cool for 3-4 minutes before slicing.
