Ingredients:
- 1.5 lbs cooked chicken breast, diced
- 1 16 oz can diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 tablespoons snipped cilantro
- 1/2 teaspoon sugar
- 8 cups chicken broth
- 2 or 3 chipotle peppers in adobo sauce
- 1/2 cup frozen corn
- 1 15 oz can black beans, rinsed and drained
- Optional garnishes: queso blanco or jack cheese, chopped avocado, fresh cilantro, fresh lime, tortilla chips
Directions:
- In a stockpot, combine the diced chicken, undrained tomatoes, onion, garlic, cilantro, sugar, and chicken broth. Cover and bring to a boil.
- Turn heat down and simmer for 20 minutes.
- Add the chipotle peppers, corn, beans, and a little adobo sauce. Cover and finish cooking about 20 minutes.
