Keto Tiramisu Sundae

Ingredients:

For the Cake:

  • ½ cup sour cream
  • ½ cup butter, softened
  • ⅓ cup granulated sweetener (I use Lakanto)
  • 2 oz espresso, or strong coffee
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • pinch salt

For the Cream Filling:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sweetener (I use Lakanto)
  • 1 tablespoon vanilla extract
  • 8 oz mascarpone cheese

For the Toppings:

  • 1 scoop Enlightened Coffee & Cream Ice Cream
  • Cocoa Powder for dusting

Instructions:

For the Cake:

  1. Preheat oven to 350°F. Line a 9×9 cake pan with parchment paper. (Other size pans may work as well, but you’ll get varying degrees of thickness to the cake).
  2. In a stand mixer, whisk together sour cream, butter and granulated sweetener until smooth, about 3-4 minutes.
  3. Add espresso, eggs & vanilla, then whisk to combine, for about 1 minute.
  4. Add almond flour, baking powder and salt. Mix on med-low until fully combined and relatively smooth, about 1-2 minutes.
  5. Transfer cake batter to lined cake pan and bake for 25-30 minutes. Remove from oven and let cool completely.

For the Cream Filling:

  1. While the cake is cooling, add heavy whipping cream to a chilled mixing bowl and whip to stiff peaks. Add vanilla and sweetener, then whisk to combine (5-10 seconds). Transfer the whipped cream to a prep bowl.
  2. In the mixing bowl, add mascarpone cheese and whisk until mostly smooth (2-3 minutes).
  3. Fold whipped cream into mascarpone cheese. I find using half of the whipped cream at a time works best.

For the Assembly:

  1. Remove cooled cake from the pan and place on a flat surface or cutting board. With a sharp knife, slice the cake into two layers. You can also create “lady finger” sizes. I used a cookie cutter for round shapes.
  2. Place the first layer of cake in a small serving bowl. Cover the layer with cream filling and a dusting of cocoa powder. Add second layer of cake and repeat with more cream filling.
  3. Finally, serve with a scoop of Enlightened Keto Coffee & Cream ice cream and additional cocoa powder.
