Sweet and Sour German Green Beans

Servings: 4

Ingredients:

  • 1 pound green beans, washed and trimmed
  • 4 slices bacon, diced
  • ¼ cup onion, finely chopped
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons water
  • 1 tablespoon low-carb brown sugar (Sukrin Gold)
  • ¼ teaspoon salt
  • 1 teaspoon whole-grain mustard

Instructions:

  1. Cook the green beans until tender. I steam mine in the microwave, but use your favorite method. Drain well once cooked.
  2. While the beans cook, put the bacon in a medium-large pan over medium heat. Let the bacon cook for four minutes until almost crispy. Add the onions and sauté for a few minutes until they begin to soften.
  3. Add the apple cider vinegar, water, and Sukrin Gold to the bacon and onions and stir. Reduce heat slightly. Add the whole-grain mustard into the pan.
  4. Add the green beans to the pan and stir to coat and heat through. Season to taste with salt and pepper. (I like lots of pepper because it brings out a nice savory flavor). Serve hot.
