Ingredients:
- 1 pound green beans, washed and trimmed
- 4 slices bacon, diced
- ¼ cup onion, finely chopped
- 2 tablespoons apple cider vinegar
- 2 tablespoons water
- 1 tablespoon low-carb brown sugar (Sukrin Gold)
- ¼ teaspoon salt
- 1 teaspoon whole-grain mustard
Instructions:
- Cook the green beans until tender. I steam mine in the microwave, but use your favorite method. Drain well once cooked.
- While the beans cook, put the bacon in a medium-large pan over medium heat. Let the bacon cook for four minutes until almost crispy. Add the onions and sauté for a few minutes until they begin to soften.
- Add the apple cider vinegar, water, and Sukrin Gold to the bacon and onions and stir. Reduce heat slightly. Add the whole-grain mustard into the pan.
- Add the green beans to the pan and stir to coat and heat through. Season to taste with salt and pepper. (I like lots of pepper because it brings out a nice savory flavor). Serve hot.
