Low-Carb Green Bean Casserole

Ingredients:

  • 3 cups frozen green beans
  • 1/2 cup white onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup heavy whipping cream
  • 1/2 cup chicken stock
  • 1/2 cup chopped mushrooms
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon pink Himalayan salt
  • 1/2 teaspoon pepper
  • 1 oz pork rinds

Instructions:

  1. Preheat oven to 350 degrees.
  2. Thaw green beans (you can microwave them for 5 minutes to heat them through). If you use fresh green beans, just make sure to snap the ends and boil them to cook them through.
  3. Add butter to a saucepan and heat over medium heat.
  4. Add onion, mushrooms, and garlic and cook until fragrant (and mushrooms have cooked down).
  5. Add the cream and chicken stock and bring to a boil. Once boiling, turn down to simmer and allow to simmer for 10-15 minutes.
  6. Add xanthan gum and stir until sauce is thick.
  7. Add green beans to the cream sauce and coat thoroughly.
  8. Transfer green beans to a skillet and top with crumbled pork rinds.
  9. Place in oven for ten minutes, then broil for two minutes. Serve warm and enjoy!
