Spiked Peppermint Hot Chocolate (that won’t spike your blood sugar!)

This spiked peppermint hot chocolate will provide a warm adult beverage for cold nights, without all the sugar.

Ingredients:

  • 1 cup unsweetened coconut milk (almond milk could also be used)
  • 1 Tbsp cocoa powder
  • ¼ tsp stevia
  • ¼ tsp vanilla extract
  • ¼ tsp peppermint extract
  • 1.5 oz (1 shot) vodka
  • Pinch Sea Salt

Directions:

  1. In a small saucepan, mix all ingredients except vodka.
  2. Heat mixture on low for 10 minutes.
  3. Pour vodka into mug.
  4. Pour cocoa over vodka.
  5. Enjoy responsibly!

    It is unfortunate that you have chosen an alcoholic beverage for a diabetic and then have the gall to state that it will not raise blood sugar. Drinking alcohol is probably the worst thing a diabetic could do. According to Healthline…

      Thank you for your comments. Drinking alcohol is a personal decision, and we certainly like to address our readers who do drink alcohol responsibly. It turns out that vodka has zero carbs and is one of the best types of alcohol you can drink to not spike your blood sugars. We respect anyone who doesn’t drink alcohol, and you can easily make the recipe and leave the alcohol out.
