This bright, colorful and flavorful fall salad is easy to throw together using a few pre-prepped ingredients and a simple vinaigrette.
Yield: 1 Serving
Ingredients for salad:
- 2-3 handfuls arugula
- 1/2 cup chopped/cooked butternut squash (we used a Trader Joe’s bag that is pre-peeled and chopped, just microwave for a couple of minutes)
- 2 Tbsp pomegranate seeds
- 1 beet, roasted/peeled/sliced (we used the brand Love Beets, which come pre-roasted and peeled for convenience)
- ~3 Tbsp goat cheese
- ~3 Tbsp pumpkin seeds (we used a seed blend from the brand Go Raw, but you can add any nut/seed for a little crunch)
- ~2 Tbsp balsamic vinaigrette, drizzled
Ingredients for Balsamic vinaigrette (this makes enough for several salads):
- 1/2 cup avocado oil (or olive oil)
- 1/2 cup balsamic vinegar
- ~3 Tbsp honey
Directions:
Combine all salad ingredients in a bowl. Mix ingredients for dressing and toss preferred amount with salad.
