The McEdelman Breakfast Sandwich

A creation from Dr. E himself, this is his favorite breakfast and he eats it almost every morning. You can make it with any of your favorite ingredients (his are below) and it’s easy to wrap up and take with you if you’re on the go!

Note: You will need a silicone ramekin for these recipes.

Sausage McEdelman Ingredients:

Note: to save about 50 calories, you can use sandwich thins

Directions:

Put the sausage crumbles into the ramekin.

Add the egg beaters.

Steal some sausage crumbles for yourself (they’re fully cooked – it’s ok!)

Top with a few dashes of hot sauce.

Put the ramekin on a microwave-safe plate in the microwave and cook for 4 minutes. (FYI, the mixture will probably puff up as it cooks!)

Toast the English muffin while the egg mixture is in the microwave.

Pop the egg mixture out of the ramekin and place on the English muffin.

And…voila!

Add salt and pepper if desired, and enjoy!

Calories: 277, Fat: 5g, Carbs: 29.5g, Protein: 22.5g, Fiber: 1g, Sugar: 1g

 

Pesto McEdelman Ingredients:

Directions:

Put egg beaters into ramekin and mix in the pesto.

Top with shredded cheese.

Put the ramekin on a microwave-safe plate in the microwave and cook for 4 minutes. (FYI, the mixture will probably puff up as it cooks!)

Toast the English muffin while the egg mixture is in the microwave.

Pop the egg mixture out of the ramekin and place on the English muffin.

Add salt and pepper if desired, but pesto can be salty so you may not need it.

Enjoy!

Optional ingredients:

  • Sliced kalamata olives
  • Bacon crumbles
  • Chopped peppers
  • Chopped ham or turkey
  • Onion
  • Mushrooms

    I’m diabetic should I use this recipe

      Yes you absolutely can – Dr. Edelman eats it almost every morning. If you’d like lower carbs, you can use the sandwich thins recommended in the recipe.

  2. I’m week one after being diagnosed with steroid induced diabetes. I’m being told I need 60-75 gr of carbs per meal. I’m was surprised that you have half of that for your breakfast. What are the differences between your requirements and mine.

    • We both should watch the amount of carbs …me being a type 1 and you having more of a type 2-like diabetes. I am surprised how many carbs they suggested per meal, but I really do not know your case. Us type 1s take fast-acting insulin for the carbs we eat, so there are no real restrictions.
