Kid-Friendly Meatballs

Serving Size: 2 meatballs

Ingredients:

  • ½ cup ketchup
  • 3 tablespoons balsamic vinegar
  • 1 lb ground turkey
  • ½ zucchini (grated)
  • 1 carrot (grated)
  • ½ onion (grated)
  • 1 clove garlic, minced
  • 2 teaspoons chili powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt (optional)
  • 1 egg, slightly beaten
  • ½ cup old-fashioned rolled oats (not quick cooking)
  • 3 tablespoons grated parmesan cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. In a small bowl, whisk together the ketchup and vinegar for the sauce.
  3. In a medium bowl, mix together remaining ingredients for the meatballs. Shape into 1-inch balls.
  4. Place meatballs on a baking sheet and top evenly with sauce.
  5. Bake for 45 minutes or until done.
