Ingredients:

For the Base:

  • 2/3 cup almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon low-carb sugar substitute
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pink Himalayan salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon liquid stevia
  • 1 large egg, room temperature
  • 4 tablespoons butter, room temperature

For the Filling:

  • 4 large eggs
  • 1 large egg yolk
  • 1/3 cup lemon juice
  • zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1/4 cup low-carb sugar substitute
  • 1/2 teaspoon liquid stevia
  • 2 tablespoons coconut flour
  • 1/4 cup almond flour
  • 1 tablespoon gelatin powder

Instructions:

For the Base:

  1. Combine almond flour, erythritol (low-carb sugar substitute), baking powder, and salt. Mix until well combined.
  2. Add vanilla, stevia, egg, and butter. Mix with a hand mixer or food processor. Add flour mixture to butter mixture in two batches. Refrigerate dough for at least 1 hour.
  3. Preheat oven to 375F and line an 8×8″ baking pan with parchment paper, or spray the pan with non-stick spray.
  4. Transfer the chilled dough to the baking pan and press it down into the pan with your hands or a spatula.
  5. Bake for 6-8 minutes. The base should be slightly undercooked. Make the filling while the base cools.

For the Filling:

  1. Turn the oven down to 350F.
  2. In a large bowl add eggs, egg yolk, lemon juice, lemon zest, erythritol, stevia, and vanilla extract. Mix until well combined. Then add coconut flour, almond flour, and gelatin. Combine and allow to thicken for 5 minutes.
  3. Pour filling onto cooked crust and bake for an additional 12-15 minutes.
  4. Remove the bars from oven and allow to cool. Once room temp, transfer to the refrigerator for 1 hour to continue setting.
  5. If desired, top with powdered erythritol prior to slicing and serving. Best served cold and stored in an air-tight container in the fridge for up to one week.
